Our Favorite Denver Coffeehouses: Day 3

Another favorite of ours, we initially discovered in Boulder, but quickly learned they would be opening another location in the RiNo (River North) District of Downtown Denver. Boxcar Coffee Roasters has its newest location in the Taxi Campus and shares the marvelously modern space with reFuel.

You can’t go wrong with one of Boxcar’s basic menu options to accompany one of the best breakfast sandwiches we’ve ever had from reFuel.  Again, the cortado and the latte are our go-to, but sometimes a freshly brewed cup is all you need. And the best part is watching the process: It looks like a coffee chemistry lab. As a matter of fact, that’s exactly how it’s referred to in an article on Denver Eater:

Collaboration and space-sharing are not new to Boxcar – the coffee business shares its original Boulder shop with Cured, a cheese and specialty foods store. Before it began its retail business, Boxcar roasted beans for several restaurants, Frasca Food and Wine being among them. Vajra Rich, along with his partner and wife Cara, has mastered both high-altitute roasting and high-altitude coffee brewing with a unique temperature control system that allows steeping coffee grounds at exactly 203 degrees. If chemistry isn’t your thing, that translates to some damn good cups of coffee.”

If you find yourself wanting to try out Boxcar, check out the RiNo location which is only open during the work week, or head up to their Boulder shop on the weekend. You won’t be disappointed.
